As I am on a serious health kick that involves a strict zero alcohol policy I thought replacing Beer Friday with a newly coined Fermentation Friday would be a fun idea. I have become progressively more obsessed with lacto-fermented foods and especially vegetables as of late. One such infatuation has been with kimchi and one of my two favorite brands is from a little family outfit called Mama O’s. The depth of flavor and the rich sweetness envelops your mouth while a sour spicy kick slaps your tongue. Stay tuned as I hope to introduce a few other of my favorite fermented products on the next couple of Fridays.
